It's pancake time again! My mother used to make buckwheat pancakes for us, from time-to-time, as a special treat. Here is a great variation:
1 cup all-purpose flour
½ cup whole wheat flour
½ cup buckwheat flour
2 tablepoons sugar
1 teaspoon salt
1 teaspoon baking soda
4 teaspoons baking powder
2 eggs, lightly beaten
4 tablespoons butter, melted
1½ cups buttermilk
½ cup milk
2 ripe bananas, mashed
In a large bowl, combine the dry ingredients. In another bowl, combine the remaining ingredients. All the liquid mixture to the dry, stirring well. Drop by ⅓ cupfuls onto a 350° griddle. Serves 4 to 6.
